Even though it’s not summer yet (and it won’t be for nearly another month!), my food and drink brain has been all summer, all the time. Maybe it’s because this month has been rather dreary and the wet winter seemed to last forever, or maybe I’m just ready to feel the sun on my face whilst sharing cocktails on the patio. Probably all of those things, actually.
This cocktail is a riff on a classic Tom Collins-minus the cherry, plus sweet floral notes from fragrant elderflower and violet liqueurs. I would even call this drink feminine, not because it’s girly and cloying, but because it’s lush, just sweet, and effervescent but still manages to pack a punch.

Fleur Collins Cocktail

St. Germain and Creme de Violette lend a floral twist to the bright and bubbly Tom Collins cocktail.

Serves: 1 cocktail
Ingredients
- 2 ounces lemon juice
- 1 to 2 ounces gin
- 1 ounce St. Germain
- ½ ounce Creme de Violette
- 1 ounce simple syrup
- ice
- soda water
Instructions
- Combine the lemon juice, gin, St. Germain, Creme de Violette, and simple syrup in a mixing glass and stir to combine. Fill a cocktail glass with ice and pour over the mixture. Top with soda.
Notes
Elderflower and violet liqueurs can be found at many liquor stores. I used St. Germain elderflower liqueur and Rothman & Winter Creme de Violette.
*Simple syrup is a 1:1 ratio of water and sugar. Just mix both in a saucepan over medium-high heat. Stir to dissolve the sugar and bring the mixture to a boil. Boil for 1 minute, pour into a heatproof jar to cool, and store in the refrigerator for up to 2 weeks.
